Grape harvest: entirely handmade, in boxes of 30 Kg
Fermentation: white vinification with soft pressing, in steel tanks at a controlled temperature, in the spring following the harvest, the cuvee is drawn and then the refermentation in bottle for 36 months on selected yeasts. Finally we proceed to the degorgement.

Description of the wine: the careful selection of the grapes, the soft and delicate pressing it allow to obtain a wine of extraordinary freshness and integrity. The color is straw yellow, delicate scent of white flowers and ripe yellow fruit, a final scent of yeasts. Wine of good structure, sapid and elegant.
Food pairings: excellent as an aperitif and with fish dishes
